Hi – chestnut allergy is rare so only need to avoid this if you have specific reason to ie previous reaction or a positive test to it. lack of eosinophilils doesn't exclude the possibility of a gut allergy although you do, by definitiion, need a certain number of eosinophils for a diagnosis of eosinophilic esophagitis. if you are trying to avoid so many things, you sould be getting a proper reassessment from a specialist so the correct testing can be arranged. Ask your GP for a referral.

if you are ok with food in the plain form, derivatives should be fine. Remember it is the protein you are allergic to, which is in low levels in oils so being ok with sesame oil doesn't mean you would be ok with plain sesame but if you are ok with sunflower seeds, sunflower oil will be fine. would be very unlikely to have suddenly become allergic to numorous foods. It may be you have a developed what is called urticaria - itchy spots happening at random. If it is troubling you, best discuss with your GP.
