Where can I get the best plan or ideas for a diet to suit me gradually losing weight?

I have severe Chronic Fatigue Syndrome and my current planned activity regime is be resting for 55 minutes in every hour.
That's horizontal, and reading or watching TV count as activities, not rest.
(occupying my mind without spending energy is a whole separate field and issue)

Not surprisingly, even though I've cut down on my food intake, I'm gaining weight.
I don't think I'm going to be happy to know this, as food is a remaining pleasure,
but what should I be eating (and not eating?)

Anything requiring significant preparation time or effort is ruled out!
