Our pediatrician told us that our egg-allergic son (diagnosed with a skin-prick test at 1-month-old after severe eczema occurred) could safely eat eggs in baked goods, because after 20 minutes in the oven the egg protein would be de-natured, or neutralized. Six years later, my other two sons and myself were also diagnosed with egg allergies (via a RAST blood draw) and our new allergist told us to avoid eggs in every form, including in baked goods. While the first child would present with immediate neck welts and facial itching when he ingested lightly-cooked eggs (accidentally, in homemade ice cream), the other boys have never had any symptoms from eggs at all, from scrambled eggs all the way to baked items. Has there been any research recently on egg allergies?

recent studies in the US showed that approx 70% of egg allergic kids could tolerated baked egg eg in cakes. However, of those that couldn't , some kids had bad reactions ot the baked egg. You should discuss with your allergy doctor your child's individual circumstance to decide if they should try baked egg and if so, if they need to do it under medical supervision.
