Dairy, egg, nut and peanut free cake or cupcakes
12 oz self raising flour
3 tbsp cocoa powder (optional)
8 oz sugar
1 tsp baking soda
1/2 tsp salt
1 tbsp vinegar
5 tbsp oil
1 tsp vanilla
8 fl oz water
Preheat oven to 350F/180c/Gas mark 4
Put the dry ingredients into a mixing bowl and mix thoroughly.
Put the wet ingredients in a separate bowl and stir to combine.
Add the wet ingredients to the dry ingredients and mix until you get a smooth batter. Do not beat.
Pour the mixture into a greased and floured 9" round cake tin or 12 cupcake cases.
Bake in the oven for approx 35 minutes for cake and approx 20 minutes for cupcakes.
