i am afraid yeast intolerance itself it rather a controversial entity and agree the internet is full of stuff trying to take advantage. Best bet is a careful exclusion with the help of a dietician to see if this really is the answer.

the size of the test relates to the likelihood of being allegic so big wheal size means more confidence in the diagnosis of allergy. A big test does not mean he will have bad reactions but generally speaking, kids with bigger tests tend to have a more persistent allergy.

genuine allergy/intolerance to this many things is very uncommon and my only advice would be to make sure you are seeing doctors in a specialist allergy centre where they have expertise with such complex cases.

most children do outgrow milk allergy eventually. the protein in fish that causes most allergy is present in much smaller quantities in tuna than in white fish. Canning tuna also makes it less allergenic so this is a common experience. why not start by getting the ingredient lists of all 3 and seeing if there is anything in common. What you describe does sound suspicious of a food allergy and you should ask your doctor to investigate this
