Gluten Free Pastry

This recipe might seem strange but it works really well.

Pastry:
1 cup GF Flour
1tspn Xanthan Gum
½ tspn Baking Powder
Pinch Salt
1 Large Potato, peeled and cooked until tender
60g Butter
60g Cream Cheese

Method for Sausage Rolls
Preheat Oven to 180c
Place the flour, gum, baking powder and salt into a mixing bowl
Place your cooked potatoes into a mixing bowl. Mixing until smooth.
Then add the butter and cream. Once light and fluffy
Combined Dry bowl mix with the now fluffy mix.
Put in the fridge for about 20mins so it’s easier to roll.
Place your pastry on some baking paper and roll out to make a square.
Then place your Sausage in the middle. Use the Baking paper to help you roll.
Then place in the Oven for 20 mins
Leave to cool and enjoy x

My daughter really likes Debbie and Envy Sausages (Gluten, Wheat and Soya Free).
· I make the above pastry and remove the skin from the sausages to make Sausage rolls- Great for Picnics and party’s or just after school dinner
· I make the above Pastry to make homemade pies.
